Mixed Green Salad with Grilled Chicked & Lychees
1 cup chopped fresh or canned lychees
4 cups mixed greens
1 medium red sweet pepper cut into rings
1 lb. boneless, skinless chicken breasts
Lychee Vinaigrette
Prepare the Lychee Vinaigrette and refrigerate
Grill the chicken and cut it into strips
In a large bowl toss together the salad greens, chicken, lychees and sweet pepper.
Pour lychee dressing over salad and toss lightly to coat
Servings: 4
