Warm Tropical Salad

2 Tbs. butter
2 Tbs. light brown sugar, packed
Large dash of ground ginger
2 Tbs. light rum or Grand Marnier
1 cup of fresh lychees

1. Peel, pit & slice fruit into bite-sized portions and place in bowl.

2. Combine butter, brown sugar and ginger in large skillet. Place skillet over low heat until butter is melted. Add fruit, the firmest first and then the ripest, and saute briefly until fruit heats through and renders its' juice.

3. Add rum. Remove pan from heat.

Serve salad warm or at room temperature.
