2 medium ripe bananas
2 tsp. groundnut oil
1 oz. (30g) sugar
pulp of 3 passionfruit
4 lychees, peeled and stoned
1 fl. oz. (30ml) water
1 oz. (30g) creamed coconut, grated
Peel the bananas and slice each into 5 pieces at a slant
Heat a frying pan with the groundnut oil, add the bananas and fry them for 1 minute until golden.
Add half the sugar, lower the heat and fry for another 2 minutes until the bananas are
Transfer them very gently from the pan into a dish and set aside.
Mix the pulp and seeds of the passion fruit with the lychees, water and the
remaining sugar. Set aside.
To serve, arrange the roasted bananas and mango slices around the outside
of two plates. Place the lychees in the center and top them with the grated
coconut. Pour the passion fruit juice around and over the bananas and serve.
