Steamed Lychee Sweet Cake

2 cups glutinous rice
2/3 cup rice flour
3/4 cup coarse sugar
1 cup brown sugar
1/2 cup lychee jam
3 cups water
1 sheet cellophane
1 wet gauze

Soak a steaming basket in water for 4 hours. Mix ingredients and lychee jam well. Sieve and put into a large bowl.

Pour well mixed ingredients into a bowl of rice flour. Stir and mix well.

Spread wet gauze and cellophane on steaming basket. Pour in flour paste. Cover. Microwave on medium-high for 30 minutes.

Halfway through steaming, take out the cake and spray some water on the surface to prevent it from cracking.
