Caribbean Cowboy Cocktail

2 oz. Fresh Mango Juice
2 oz. Fresh Lime Juice
1½ oz. Simple Lychee Syrup  Click here to Obtain Lychee syrup
2 oz. Mount Gay Rum
3 Fresh Mint leaves
garnish Sliced Carambola (Star Fruit)
Chili Powder

Preparation


Place all ingredients into a blender and blend well on high speed. then, pour ingredients into a bar shaker with ice to chill, shake and strain into an ice cold glass, rimmed with red chili powder. Top with three half ounce ice balls of guava rum sorbet, as detailed below, garnish with sliced star fruit.


Guava Rum Sorbet


2 Cups Sugar
1½ Cups Water
1 Cup Fresh guava puree
1 oz. Fresh lime juice
11½ oz. Rum

Bring water and sugar to a boil, add guava puree, lime juice and rum. Simmer for 5 minutes, place in ice cream maker and churn to desired consistency, remove and freeze for use.
