Asian Chicken and Noodles
8 oz vermicelli broken in half
½ cup stir fry sauce
¼ cup lychee juice
¼ cup mayonnaise
½ tablespoon crunchy peanut butter
1¼ cups chicken, cooked & diced
3 cups Asian style vegetables like broccoli, snow peas, shredded cabbage, bean sprouts, etc.
¾ cups shredded carrots
¼ cup chopped salted peanuts
1 tablespoon chopped fresh cilantro
Cook vermicelli as directed on the package.
Stir fry the carrots and vegetables.
Combine stir fry sauce, lychee juice, mayonnaise and peanut butter, blend well.
Add the vermicelli, chicken, and vegetables to the stir fry mixture and toss until well coated.
Garnish with chopped peanuts and cilantro.
