Tropical Fruit Stuffing with Lychee
(Makes 8 servings )
1 bird (poultry of choice - turkey, chicken, duck etc.
2 tablespoons lemon juice
5 tablespoons softened butter
1 cup onion, peeled and chopped
½ cup of chopped celery
2 cups of soft bread crumbs
1 cup of white wine
1 ½ cups of drained, peeled seedless lychees (canned or frozen)
½ cup of chopped dried mango
½ cup of chopped dried papaya
1 cup of chopped diced nuts - Optional (Tropical nuts: Macadamia and/or Cashew or Walnut and/or Almonds)
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
2 cloves of minced garlic
¼ teaspoon each of dried thyme and marjoram salt and pepper to taste
1. Melt butter and sauté onion until translucent, about 5 minutes; add bread crumbs to onioins, stirring to combine. Gently stir in lychees, dried chopped mangos, papayas, chopped celery and white wine; cook for 5 minutes longer. Stir in lemon juice, nutmeg and allspice as well as thyme, marjoram and garlic; mix well.
2. Stuff into bird or bake at 350ºF on a buttered and covered baking dish for 30 minutes.
